Skinny Taco Salad

Think back to two weeks ago when I posted my plan for getting healthy in six weeks. If you have been wondering how it's going and why I haven't posted any thoughts or motivation it's because I suck. I chose to start this little thing over spring break! I guess I believed that because I wasn't going away with friends for spring break, I would be saving my liver and lots of calories. Margaritas and mimosas are very obtainable in Massachusetts and I indulged. A lot.

Post spring break I am doing my best to get myself back on track. I force down as much water as I can in a day, adding fresh lemon slices to at least one blender bottle full. (One usually turns into two.) I have also been enjoying Yogi's Blueberry Slim Life Green Tea which, believe it or not, I swear by. I have done some meal prep which means when I'm hungry I reach for a healthy meal opposed to snacking. My favorite meal prep meal this week has been my taco salads. So without further ado: Skinny Taco Salad. 

Ingredients:
1. 1 Package of ground Turkey
2. 1 packet of low sodium taco seasoning
3. 1 Green pepper and 1 onion (optional)
4.Romaine lettuce and fresh baby spinach
5. Toppings; Tomato, Sharp Cheddar Cheese, Avocado, Plain Greek Yogurt


Directions: 
1. Dice onions and peppers, Sautee with olive oil on high heat for 10 minutes.


2. Throw all ground turkey into a pan with olive oil until cooked through. Add Taco seasoning and onion and pepper mixture.

3. Leave on stove on low heat to stay warm while prepping the toppings and salad.


Use Greek Yogurt opposed to sour cream as a healthier option. I threw mine together quick one night with what my poor,lazy college student self had on hand.
